Easy High Protein Egg Bites

Meal prep these muffin tin egg bites in less than 10 minutes (cook time may vary) and have them ready for your busy mornings!

Change up the flavours or toppings as much as you'd like, for these ones I made bacon, feta, and spinach egg bites.

INGREDIENTS

6 eggs
1/2 cup liquid egg white
1 cup Cottage Cheese
1/2 tsp garlic powder
1/2 tsp pepper
1/2 cup cooked bacon bits
1/2 cup chopped spinach
1/2 feta cheese

DIRECTIONS

1. Preheat oven to 325 and prep your muffin tins with non-stick spray.
2. Blend ingredients until smooth and fill muffin tins about 3/4 to avoid them overflowing.
3. Top each one with your choice of toppings, for this we used bacon bits, spinach, and feta cheese.
3. Half-fill baking trays with water and place muffin tins on top (the steam from the baking tray will help evenly cook the egg bites without over cooking them).
4. Cook for approx 25 minutes in the oven.
5. Let cool in muffin tin to rest until you can bag them and store them for later!

Store them in the fridge for up to 3 days or the freezer for up to one month.

To reheat, pop them in the microwave or the air fryer and eat on the go!
